Set oven to 350. On my cooktop In an oven safe saute pan, I add a pat of butter and a splash of olive oil and sauté a chopped fresh poblano chile (or regular green pepper), a medium sized onion and a small can of Hormel smoked ham that I break up. Then I add a drained can of these potatoes that I also break up a bit. I season with a little salt and pepper and some hot paprika or pimenton. I’m looking for a little browning before I add my 6 well beaten eggs that I’ve beaten with a splash of heavy cream and a bit of salt and pepper. My burner flame is medium. I don’t mix. I just let it cook gently until it looks at least halfway set. That is when I place the pan in the oven for the top to finish. It takes something like eight minutes but keep an eye on it. You don’t want it to dry out fully. This is great hot, room temperature or cold. And slices last a good week in the refrigerator in an airtight container. To reheat just needs about 30 seconds in the microwave. Yum for any meal.
